Chef’s Notes
Foraging for blackberries is one of my favourite things to do at this time of year, when the hedgerows are brimming with these nutritious, tasty berries. There are so many ways to enjoy blackberries, and one of my favourites is in a scrumptious sorbet! This sorbet recipe is super simple and doesn’t require any special equipment, although you can certainly use your Ninja Creami if you have one! If not, a simple blender will do just fine. Check out our foraging blog post if you want to read about best foraging practises and what else you can forage in the UK.
Ingredients
- /
- 560g blackberries
- 250ml water
- 2 tbsp lemon juice
- 150g cane sugar
Method
- Rinse your blackberries well under running water to ensure they’re free from creepy crawlies
- Combine the blackberries with the water and lemon juice and purée until smooth, then run through a sieve to remove the seeds
- In a saucepan over medium heat, whisk together the blackberry juice and sugar until combined
- Allow the mixture to simmer for a few minutes to reduce slightly
- Freeze the mixture and process using a Ninja Creami or break it up into chunks and blend in a blender until creamy
- Optional: garnish with a couple of mint leaves when serving!
